Preparation
- Preheat your oven to 350°F (175°C).
- Grease a casserole dish.
- In a bowl, stir together the French onion soup, broth, uncooked rice, garlic powder, black pepper, and salt.
- Pour this mixture into the greased casserole dish.
- Nestle the chicken on top of the rice mixture and dot with butter.
- Cover tightly with foil to trap steam.
Baking
- Bake in the preheated oven for about 45 minutes or until the rice is tender and the chicken is cooked through.
- Add the cheese on top and return to the oven uncovered for another 10-15 minutes until the cheese is melted and bubbly.
- If using French fried onions, add them on top at the last 5 minutes of baking.
Notes
You can prep it earlier in the day and refrigerate. Let it sit at room temperature for about 20 minutes before baking. For variations, consider adding mushrooms or baby spinach for added flavor and nutrients.
