Preparation
- Season the chicken with salt, pepper, and garlic powder.
- Heat a little oil and butter in a large skillet over medium heat.
- Sear the chicken for a couple of minutes on each side until lightly golden. Remove to a plate.
- Add sliced onions to the skillet with a pinch of salt. Cook, stirring often, until soft and golden. If they start to stick, add a splash of broth and scrape up the brown bits.
- Stir in flour if using, then pour in broth and let it simmer for a minute or two until it becomes saucy.
Assembly and Cooking
- Nestle the chicken back into the pan, spoon onions over the top, then cover everything with lots of cheese.
- Broil for a few minutes until the cheese is bubbly and browned in spots. Watch carefully, as it can brown quickly.
Finishing Touches
- Let the dish rest for 5 minutes before serving to allow the sauce to settle.

Slice onions evenly to ensure they cook down quickly and evenly. Use leftovers of chicken drippings for added flavor. Adjust salt according to the types of broth and seasonings used.
