Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 baking dish.
- In a skillet, cook the sliced onions in butter or olive oil until soft and golden, about 10 to 15 minutes.
- In the prepared baking dish, combine uncooked rice, broth, and French onion soup mix. Stir until rice is mostly covered and evenly seasoned.
- Spread the cooked onions over the rice mixture. Season the chicken with salt and pepper, then place it on top of the mixture.
- Cover the baking dish tightly with foil and bake for 45 to 55 minutes, or until the rice is tender and the chicken is cooked through.
- Uncover the dish, add cheese if desired, and bake for an additional 5 to 10 minutes until the cheese is melted and bubbly.
