Ingredients
  

For the ribs
  • 2 racks pork baby back ribs Spare ribs can be used, but they take longer to cook.
  • to taste none salt and black pepper Use generously to season the ribs.
  • 2-3 tablespoons brown sugar Adjust for sweetness preference.
  • 1-2 teaspoons paprika Add more for a sweeter, smoky flavor.
  • 1 teaspoon garlic powder Enhances the seasoning.
  • 1 cup favorite BBQ sauce More can be added if you like it saucy.
  • 1 none aluminum foil For wrapping the ribs.
  • 1 none baking sheet For easy cleanup.
  • a pinch none cayenne Optional for added heat.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with foil for easy cleanup.
  2. Remove the thin membrane on the back of the ribs to avoid chewiness.
  3. Mix the seasonings of salt, pepper, brown sugar, paprika, garlic powder, and cayenne (if using) and rub them all over both sides of the ribs.
  4. Wrap each rack tightly in foil, seam side up, to trap the steam.
Cooking
  1. Bake the ribs in the oven for about 2 hours and 15 minutes to 2 hours and 45 minutes (for baby back ribs) wrapped in foil.
  2. Carefully open the foil to release steam, then brush with BBQ sauce.
  3. Return them to the oven uncovered for an additional 10 to 15 minutes to thicken and caramelize the sauce.

Notes

Rest the ribs for 5 to 10 minutes after cooking to let the juices settle before slicing. You can also make variations with different seasonings and sauces to keep the recipe interesting.
