Easy Mango Cheesecake

Ingredients
  

For the Crust
  • 200 g Graham crackers or digestive biscuits Crushed for the crust
  • 100 g Melted butter To hold the crust together
For the Filling
  • 450 g Cream cheese, full fat Should be softened
  • 150 g Powdered sugar For smooth sweetness
  • 300 ml Heavy cream To whip and fold in
  • 250 g Mango puree From ripe mangoes or good quality canned puree
  • 1 tsp Vanilla extract To enhance flavor
  • a pinch Salt To round out the flavor
For the Topping (optional)
  • 50 g Extra mango puree Mixed with a spoon of sugar
  • as needed Toasted coconut For an extra tropical touch

Method
 

Preparation of the Crust
  1. Crush the graham crackers or digestive biscuits into fine crumbs.
  2. Combine the crushed crackers with melted butter and mix well.
  3. Press the mixture tightly into the bottom of a lined pan, using the bottom of a glass to pack it down.
  4. Chill the crust in the refrigerator while preparing the filling.
Preparation of the Filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually add powdered sugar and beat until fully incorporated.
  3. In a separate bowl, whip the heavy cream until thick peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture.
  5. Add the mango puree, vanilla extract, and a pinch of salt, and fold until combined.
Assembly and Chilling
  1. Spread the filling evenly over the chilled crust.
  2. Optional: Top with extra mango puree mixed with sugar and toasted coconut.
  3. Cover and chill in the refrigerator for at least 6 hours, preferably overnight.
Serving
  1. For clean slices, run a knife under hot water, wipe dry, and slice into bars.

Notes

Use ripe mangoes for best flavor. Ensure that the mango puree is thick for a firm set. Do not rush the chilling process to achieve the best texture.
