Preparation
- Preheat the oven to 375°F and line a rimmed sheet pan with parchment.
- In a large bowl, mix the sausage and cream cheese until mostly smooth.
- Fold in the shredded cheddar, keeping some strands distinct.
- Add 1.25 cups of biscuit mix and mix gently until it just comes together. Add more if too sticky.
- Scoop golf-ball sized portions and roll lightly. Arrange them about 2 inches apart on the pan.
- Bake for 18-22 minutes, until golden tops and center reaches 160°F.
- Let them rest for 3 minutes on the pan before moving to a plate.
Notes
These sausage balls can be made ahead and stored in the fridge or freezer. They reheat beautifully.
