Main ingredients
  • 1 pound uncooked pork sausage (mild or hot) Pick quality sausage for best flavor.
  • 8 ounces cream cheese, softened Use room temperature for easier mixing.
  • 1.5 cups shredded sharp cheddar Freshly shredded melts better than pre-shredded.
  • 1.25-1.5 cups biscuit baking mix Start low and add more if needed.

Preparation
  1. Preheat the oven to 375°F and line a rimmed sheet pan with parchment.
  2. In a large bowl, mix the sausage and cream cheese until mostly smooth.
  3. Fold in the shredded cheddar, keeping some strands distinct.
  4. Add 1.25 cups of biscuit mix and mix gently until it just comes together. Add more if too sticky.
  5. Scoop golf-ball sized portions and roll lightly. Arrange them about 2 inches apart on the pan.
  6. Bake for 18-22 minutes, until golden tops and center reaches 160°F.
  7. Let them rest for 3 minutes on the pan before moving to a plate.

Notes

These sausage balls can be made ahead and stored in the fridge or freezer. They reheat beautifully.
