Dry Ingredients
  • 1.5 cups All purpose flour
  • 1/2 cup Unsweetened cocoa powder Natural or Dutch process both work
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
Mix-ins
  • 1 cup Chocolate chips Semi-sweet is the default, but use what you love

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Add the dry mixture to the wet mixture and stir until just combined. Do not overmix.
  6. Fold in the chocolate chips, reserving a small handful for topping.
Baking
  1. Scoop dough into balls, about 1.5 tablespoons each. Place on the prepared baking sheet.
  2. Bake in the preheated oven for 9 to 11 minutes, until the edges look set but the center is slightly soft.
  3. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

To keep cookies soft, do not overbake and store in an airtight container. Adding a small piece of bread can help maintain softness.
