Ingredients
  

Main Ingredients
  • 1 pound ground beef (or ground turkey) Your choice of meat.
  • 1 small onion, diced Optional but recommended.
  • 2 to 3 cloves garlic, minced Optional.
  • 1 packet taco seasoning Or 2 to 3 tablespoons homemade blend.
  • 1 can Rotel (10 oz), undrained Provides flavor and moisture.
  • 1 can black beans or pinto beans, drained and rinsed Optional for added bulk.
  • 1 cup sour cream For creaminess.
  • 1 can condensed cream of chicken soup (or cream of mushroom) Adds richness.
  • 2 to 3 cups shredded cheese (cheddar or a Mexican blend) Used in layers.
  • 1 big bag nacho cheese Doritos Use most but not all chips.
Optional Toppings
  • shredded lettuce For freshness.
  • diced tomatoes Adds color and flavor.
  • jalapenos For extra heat.
  • hot sauce To taste.
  • salsa Serve on the side.

Method
 

Preparation
  1. Preheat oven to 350°F.
  2. In a skillet, cook ground beef with onion until browned. Drain if needed. Add garlic for the last 30 seconds if using.
  3. Stir in taco seasoning and Rotel. Add beans if you want more bulk.
  4. Turn heat to low. Stir in sour cream and the condensed soup until creamy and combined.
Layering
  1. In a 9x13 dish, add a layer of slightly crushed Doritos.
  2. Spoon on half the meat mixture, then sprinkle cheese.
  3. Repeat with Doritos, remaining filling, and more cheese on top.
Baking
  1. Bake for 18 to 25 minutes, until hot and bubbly.
  2. Let it sit for 5 to 10 minutes before serving.

Notes

To ensure the perfect texture, do not over crush the chips, allow the meat mixture to cool slightly before adding sour cream, and rest the casserole before serving.
