Ingredients
  

Main ingredients
  • 5 medium Russet potatoes, thinly sliced Thinly sliced for even cooking.
  • 1 pound Ground beef No need to brown first.
  • 1 large Yellow onion, thinly sliced
  • 1 large Green bell pepper, thinly sliced
  • 2 cups Tomatoes, sliced or 1 can of diced tomatoes, undrained Juice helps steam the potatoes.
Seasonings
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder Optional.
  • 1 tablespoon Olive oil Drizzle over top to help soften potatoes.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease your baking dish.
  2. Layer half of the sliced potatoes on the bottom of the dish and sprinkle with salt and pepper.
  3. Scatter half of the sliced onions and half of the bell peppers over the potatoes.
  4. Crumble half of the ground beef over the vegetables and season again.
  5. Add half of the tomatoes over the top.
  6. Repeat the layers with the remaining ingredients, finishing with the remaining tomatoes.
  7. Drizzle a spoonful of olive oil over the top and cover tightly with foil.
Cooking
  1. Bake for about 75 to 90 minutes, until the potatoes are tender and the beef is cooked through.
  2. For a little browning, uncover for the last 10 to 15 minutes.
  3. Let the casserole rest for 10 minutes before serving so the layers settle.

Notes

This casserole can be customized with added seasonings like smoked paprika or shredded cheddar. It can be prepared ahead of time and refrigerated before baking. Leftovers reheat nicely.
