Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until fragrant and translucent.
  3. Stir in the Italian sausage and cook until browned.
  4. Pour in the broth and add the canned diced tomatoes. Bring to a simmer.
  5. Add the ditalini pasta to the simmering soup.
  6. Once the pasta is cooked through, stir in spinach or kale, if using.

Notes

For leftovers, store in a sealed container. Cook ditalini separately if storing, as it absorbs broth. Adjust seasoning upon reheating.
