Ingredients
  

Turkey Preparation
  • 1 whole Turkey (10 to 14 pounds) Ensure it is fully thawed and pat it dry.
  • 1 tablespoon Salt For seasoning the turkey.
  • 1 tablespoon Black pepper For seasoning the turkey.
  • 1 teaspoon Garlic powder For seasoning the turkey.
  • 1 teaspoon Paprika For seasoning the turkey.
  • Oil as needed Peanut oil or refined canola oil High smoke point oil for frying.
Safety Equipment
  • 1 each Fire extinguisher rated for grease fires Keep it nearby during frying
  • 1 each Thermometer (oil and meat) To check oil temperature and turkey doneness.
  • 1 each Turkey fryer pot and burner Rated for the size of turkey being fried.
  • 1 pair Heat-resistant gloves Protects hands while working with hot oil.

Method
 

Preparation
  1. Thaw the turkey completely and pat it dry, inside and out.
  2. Season the turkey with salt, pepper, garlic powder, and paprika.
  3. Measure the oil level by submerging the turkey in water, marking the water line, and filling the pot to that line with oil.
Cooking
  1. Fry the turkey outdoors on a flat surface, away from flammable structures.
  2. Heat the oil to between 325 to 350 degrees Fahrenheit.
  3. Turn off the heat before lowering the turkey into the pot. Gradually lower to avoid oil surging.
  4. Fry for about 3 to 4 minutes per pound, checking the internal temperature.
  5. When the turkey's thickest part reaches 165 degrees Fahrenheit, carefully remove it and let it drain.
Resting
  1. Let the turkey rest for 15 to 20 minutes before carving.
