  • 1 cup self rising flour Can substitute with all-purpose flour by adding baking powder.
  • 1 cup granulated sugar Adjust if using sweet canned fruit.
  • 1 cup whole milk, room temperature Ensure it's not cold to avoid stiff batter.
  • 1 stick unsalted butter, melted Used for greasing the pan and mixing into batter.
  • 2 cups fruit, fresh or thawed from frozen, juices included Peaches, cherries, berries, or sliced apples work well.
  • 1 teaspoon vanilla extract Optional but enhances flavor.
  • 1 pinch salt Only if using unsalted butter.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted butter into the baking pan.
  3. In a bowl, whisk together the self rising flour and sugar to break up any clumps.
  4. Add the milk and vanilla, and whisk until smooth but do not overwork it.
  5. Pour the batter over the melted butter. Do not stir.
  6. Spoon the fruit right on top without stirring.
Baking
  1. Set the pan in the center of the oven and bake for 40 to 50 minutes.
  2. The top should be deep golden with crisp edges, and the center should look set with gentle bubbling around the fruit.
  3. Let the cake sit for 10 to 15 minutes before scooping.

Notes

Serve warm with vanilla ice cream or whipped cream. Can be customized with different fruits and spices.
