Ingredients
  

Bread and Spread
  • 8 slices Soft sandwich bread White or wheat bread, avoid crusty varieties.
  • 8 oz Cream cheese Full fat works best.
  • 1 tbsp Butter Optional, for spreading on bread.
  • 1 tbsp Lemon juice Optional, for brightening flavor.
Cucumber Preparation
  • 1 large English cucumber Thinly sliced.
Seasoning
  • 1 pinch Salt To season cucumber and cheese.
  • 1 pinch Black pepper To season cream cheese.
  • 1 tbsp Fresh dill or chives Optional, for flavor.

Preparation
  1. Slice cucumbers very thin, lay them on paper towels, and sprinkle lightly with salt. Let sit for 10 minutes, then pat dry.
  2. In a small bowl, mix softened cream cheese with a pinch of salt, black pepper, and chopped dill or chives. Optionally, add a squeeze of lemon juice.
  3. Trim the crusts off the bread if you desire the classic tea sandwich look.
Assembly
  1. Spread a thin layer of butter on each slice of bread if using, then spread the cream cheese mixture over it.
  2. Layer cucumber slices on top of the cream cheese in a single layer, slightly overlapping.
  3. Top with another slice of bread, press gently, then cut into triangles or fingers.
  4. Chill for 15 to 30 minutes before serving for cleaner cuts.

Notes

Keep cucumbers dry to maintain bread texture. You can prep the herb cream cheese a day in advance but assemble sandwiches closer to serving time.
