Preparation
- Slice cucumbers very thin, lay them on paper towels, and sprinkle lightly with salt. Let sit for 10 minutes, then pat dry.
- In a small bowl, mix softened cream cheese with a pinch of salt, black pepper, and chopped dill or chives. Optionally, add a squeeze of lemon juice.
- Trim the crusts off the bread if you desire the classic tea sandwich look.
Assembly
- Spread a thin layer of butter on each slice of bread if using, then spread the cream cheese mixture over it.
- Layer cucumber slices on top of the cream cheese in a single layer, slightly overlapping.
- Top with another slice of bread, press gently, then cut into triangles or fingers.
- Chill for 15 to 30 minutes before serving for cleaner cuts.
Notes
Keep cucumbers dry to maintain bread texture. You can prep the herb cream cheese a day in advance but assemble sandwiches closer to serving time.
