Cucumber Mint Lemonade

Ingredients
  

Cucumber Juice
  • 1 large English cucumber, chopped into chunks Optional to peel if skin is thick or waxy.
  • 1-2 tablespoons cold water For blending cucumber.
Mint-Cucumber Lemonade
  • 1 cup fresh lemon juice About 4 to 6 lemons needed.
  • 1-1.25 cups cucumber juice Made from the previous section.
  • 0.5-0.75 cup simple syrup or honey syrup Adjust to taste.
  • 1 big handful fresh mint Lightly slap the mint before adding.
  • 3-4 cups cold water or sparkling water Start with less and add to taste.
  • 1 pinch salt To enhance flavor.
  • Ice, plus extra cucumber slices and lemon rounds for serving. Serves as garnish.

Method
 

Preparation of Sweetener
  1. Make your sweetener first if needed. For simple syrup, heat equal parts sugar and water just until dissolved, then cool. For honey syrup, do the same with honey and water.
Mint-Cucumber Lemonade Assembly
  1. In a pitcher, lightly slap the mint in your hands to awaken its flavor, then add it to the pitcher.
  2. Add lemon juice, cucumber juice, and sweetener. Stir well.
  3. Add cold water or sparkling water, adjusting to taste.
  4. Taste and adjust: add more lemon for zing, more syrup for sweetness, or more water to mellow the drink.
  5. Add ice right before serving, or pour over ice in glasses.

Notes

Keep leftovers in the fridge for up to 2 days. Store the base without mint and add fresh mint to each glass later. Mint can turn bitter if left too long in the drink.
