Crock Pot Cowboy Casserole

Ingredients
  

Meat and Dairy
  • 1 lb Ground beef (or ground turkey)
  • 1 cup Cheese (cheddar, pepper jack, or a blend) For topping
  • 1 cup Sour cream Optional, to stir in at the end
Vegetables
  • 1 medium Onion, diced Yellow or white
  • 2 cloves Garlic Fresh or jarred
  • 2 cups Potatoes, diced Or frozen diced hash browns
  • 1 can Diced tomatoes with green chiles For a mild kick
  • 1 cup Corn Frozen or canned
Canned Goods and Pantry Staples
  • 1 can Canned beans Black beans, pinto beans, or a mix
  • 1 packet Taco seasoning Store bought or homemade
  • 1 cup Creamy element (condensed soup or broth and sour cream mix)
  • Salt as needed
  • Pepper as needed

Method
 

Preparation
  1. Brown the ground beef in a skillet with the onion. Drain off extra grease.
  2. Stir in garlic for about 30 seconds until fragrant.
  3. Lightly spray your crock pot. Add the beef mixture.
  4. Add potatoes, beans, corn, diced tomatoes with green chiles, taco seasoning, and your liquid or creamy base. Stir well.
Cooking
  1. Cover and cook on LOW for about 6 to 7 hours or on HIGH for about 3 to 4 hours, until potatoes are tender.
  2. In the last 15 to 20 minutes, stir in sour cream if using, then sprinkle cheese on top and cover until melted.

Notes

This casserole is great for leftovers and can be frozen for later meals. Add spices to adjust heat and serve with sides like salad or cornbread for a complete meal.
