  • 2 pounds Boneless chicken (breasts or thighs) Both options work well.
  • 8 ounces Sliced or diced ham Choose your preference.
  • 8 ounces Swiss cheese (sliced or shredded) For creamy texture.
  • 1 can Cream of chicken soup Can substitute with cream of mushroom.
  • 1 cup Sour cream or plain Greek yogurt For extra creaminess.
  • 1 tablespoon Dijon mustard Just a little, but essential.
  • 1 teaspoon Garlic powder For seasoning.
  • 1 teaspoon Onion powder For seasoning.
  • 1 teaspoon Black pepper To taste.
  • 1 cup Crushed crackers or breadcrumbs mixed with butter For a crunchy topping.

Method
 

Preparation
  1. Spray the Crock Pot with cooking spray.
  2. Add the boneless chicken to the bottom of the Crock Pot.
  3. Sprinkle garlic powder, onion powder, and black pepper over the chicken.
  4. Layer the diced ham on top of the seasoned chicken.
  5. In a separate bowl, whisk together the cream of chicken soup, sour cream, and Dijon mustard.
  6. Spread the sauce mixture over the ham.
  7. Top with Swiss cheese.
Cooking
  1. Cover and cook on low for 4 hours.
  2. In the last 20-30 minutes of cooking, sprinkle the crushed crackers or breadcrumbs mixed with butter on top to keep it crunchy.
Serving
  1. Serve over rice, egg noodles, or mashed potatoes.
  2. Enjoy as a comforting meal.

Notes

Do not overcook; chicken should be cooked through and shred easily. This dish can be prepped ahead, and leftovers taste even better the next day. Variations include using broccoli, rotisserie chicken, or smoked ham for different flavors.
