Crock Pot Chicken and Stuffing Casserole

Ingredients
  

Main Ingredients
  • 2 to 2.5 pounds Boneless skinless chicken breasts or thighs Thighs are more forgiving and stay tender.
  • 1 can cream of chicken soup Or cream of mushroom if preferred.
  • 1 cup sour cream or plain Greek yogurt
  • 1 box stuffing mix
  • 1 to 1.25 cups chicken broth Start with 1 cup to avoid mushy stuffing.
Optional Ingredients
  • 1 handful shredded cheese (optional) Add on top during the last 20 minutes of cooking.
  • to taste garlic powder For additional flavor.
  • to taste black pepper

Method
 

Preparation
  1. Lightly spray the crock pot insert for easier cleanup.
  2. Lay the chicken in the bottom of the crock pot. If thick, cut them in half for even cooking.
  3. In a bowl, stir together the cream soup and sour cream, then spread it over the chicken.
  4. In another bowl, mix the stuffing mix with broth until evenly moistened and has a crumbly texture.
  5. Spoon the stuffing over the chicken in an even layer without pressing it down.
Cooking
  1. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, depending on thickness of chicken and crock pot type.
  2. When done, fluff the stuffing with a fork, and mix in a bit if a creamier texture is desired.

Notes

For added balance, consider adding veggies like frozen green beans under the chicken. To reheat, add a splash of broth if it looks dry.
