Crock Pot Chicken and Gravy Over Rice

Ingredients
  

Main Ingredients
  • 2 pounds boneless skinless chicken (breasts or thighs) Use thighs for juicier results.
  • 1 packet chicken gravy mix
  • 1 can cream of chicken soup
  • 1 cup chicken broth or water Use low sodium if concerned about salt.
  • 1 teaspoon onion powder Optional but recommended.
  • 1/2 teaspoon black pepper Optional; adjust to taste.
  • 4 cups cooked rice Serve hot; can use white or brown rice.

Method
 

Preparation
  1. Spray your slow cooker with a little nonstick spray or use a liner for easy cleanup.
  2. Lay the chicken in the bottom of the slow cooker, avoiding stacking.
  3. In a bowl, whisk together the gravy mix, cream of chicken soup, and broth until smooth.
  4. Pour the gravy mixture over the chicken and sprinkle with onion powder and black pepper if desired.
Cooking
  1. Cover and cook on LOW for about 4 to 6 hours, until the chicken is cooked and shreds easily.
  2. Shred the chicken in the crockpot and stir it into the gravy.
  3. Serve hot over rice, generously pouring gravy on top.

Notes

Chicken thighs tend to retain moisture better than breasts. For thicker gravy, leave lid off for 10-15 minutes on HIGH. Store rice and gravy separately if saving leftovers.
