  • 2 cups Shredded cheese (cheddar and Monterey Jack) Use a melt-friendly cheese.
  • 1 cup Optional protein (shredded chicken, ground beef, or beans) Pre-cook meat if using.
  • 1 can Diced green chiles or chopped onions Optional add-ins for flavor.
  • 1 teaspoon Taco seasoning Optional seasoning for added flavor.
  • 2 teaspoons Oil or cooking spray For brushing or spraying on taquitos.
  • 1 pinch Salt For sprinkling on top after baking.

Preparation
  1. Heat oven to 425°F (220°C). Line a sheet pan with parchment for easy cleanup.
  2. Warm tortillas in the microwave under a damp paper towel for 20 to 30 seconds so they bend without cracking.
  3. Add a small line of cheese and any optional add-ins onto each tortilla. Roll tightly.
  4. Place the rolled taquitos seam side down on the baking sheet. Brush or spray lightly with oil.
Cooking
  1. Bake for 12 to 18 minutes, flipping once for extra even browning.
  2. Let the taquitos sit for 2 minutes before serving to allow cheese to set slightly.

Notes

Use a wire rack for maximum crispiness. Preheat oven fully for best results. These can be meal prepped and stored in the fridge or freezer and baked directly from frozen.
