Cooking the Chicken and Mushrooms
- Heat the butter and olive oil in a large skillet over medium heat.
- Add the chicken thighs and brown on both sides until golden, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the cremini mushrooms and sauté until they are browned, about 5-6 minutes.
- Add minced garlic and cook for 1 more minute until fragrant.
- Deglaze the pan with the white wine, scraping up the browned bits, and let it bubble for 2 minutes.
- Stir in the chicken broth and heavy cream, mixing well.
- Add the chicken back to the skillet and simmer gently until it is fully cooked, about 10 minutes.
- Taste and adjust seasoning with salt, pepper, and parmesan if desired.
Notes
Serve over mashed potatoes, buttered noodles, rice, or with crusty bread. Add a simple green side for balance. Sprinkle chopped parsley on top for a fresh touch if serving to guests.
