Ingredients
  

Main Ingredients
  • 1 lb boneless skinless chicken breasts You can also use chicken thighs.
  • 8 oz pasta (penne, rotini, or fettuccine) Short pasta is easier for one pan cooking.
  • 2 cups chicken broth Add more if necessary.
  • 1 cup heavy cream Half and half can be used for a lighter sauce.
  • 1 cup Parmesan cheese, grated Use freshly grated for better melting.
  • 1 cup sun dried tomatoes In oil is preferred for better flavor.
  • 2 cups baby spinach Frozen spinach works too, but should be thawed.
  • 4 cloves garlic, minced Add more to taste.
  • 1 tbsp Italian seasoning A pinch of chili flakes is optional.
  • 2 tbsp olive oil For cooking the chicken and garlic.
  • salt and pepper To taste.

Method
 

Preparation
  1. Slice chicken into bite-size pieces and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a pan and sear chicken until golden and cooked through. Remove and set aside.
  3. In the same pan, add more oil if needed and sauté minced garlic for about 30 seconds until fragrant.
  4. Pour in chicken broth and scrape the browned bits from the pan. Add pasta and stir. Simmer until pasta is almost tender.
  5. Reduce heat, pour in cream, and add Parmesan. Stir until the cheese melts into a smooth sauce.
  6. Stir in chopped sun dried tomatoes and spinach until wilted. Add chicken back to the pan and heat through.
Final Touches
  1. Taste and adjust seasoning with more salt, pepper, or chili flakes as needed. If sauce thickens too much, add a splash of broth.

Notes

Leftovers reheat well. Add a splash of broth when reheating to restore creaminess. For meal prep, you can cook and store chicken separately for up to 3 days.
