Ingredients
  

Casserole Base
  • 3 cups Cooked chicken, shredded or chopped Rotisserie chicken works perfectly.
  • 8 oz Cream cheese, softened Let sit out or microwave until soft.
  • 1 cup Sour cream or plain Greek yogurt
  • 2 cups Shredded cheddar cheese Freshly shredded is preferable.
  • 1/2 cup Jalapeños, fresh or pickled, drained Adjust amount based on desired spice level.
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Crumbled bacon Optional but enhances flavor.
Topping
  • 1 cup Crushed crackers or tortilla chips For added crunch.
  • 1 cup Extra cheese Optional, for more cheesiness.

Method
 

Preparation
  1. Preheat your oven to 375°F. Lightly grease a 9x13 casserole dish.
  2. In a large bowl, mix the cream cheese and sour cream until smooth.
  3. Stir in the shredded cheddar, seasonings, and jalapeños. Adjust jalapeño quantity to suit spice preference.
  4. Fold in the cooked chicken and bacon until well coated with the creamy mixture.
  5. Spread the mixture into the casserole dish and add desired toppings.
Baking
  1. Bake for 25 to 30 minutes until hot and bubbly. Broil for 1 to 2 minutes for a golden top, watching closely.
  2. Let rest for 5 to 10 minutes before serving to thicken the sauce.

Notes

For a different spice level, adjust jalapeños or add cayenne to the mixture. Drain jalapeños thoroughly to prevent a watery casserole. Use freshly shredded cheese for a creamier texture.
