Ingredients
  

Base ingredients
  • 1 cup sour cream Classic creamy base
  • 1/2 cup mayonnaise Makes the dip extra smooth
  • 1 pkg ranch seasoning packet Your favorite blend
Fiesta ingredients
  • 1 can Rotel diced tomatoes with green chiles Drained before adding
  • 1 cup corn Drained
  • 1 cup black beans Rinsed and drained
  • 1 cup shredded cheddar or Mexican cheese blend For added creaminess
Optional ingredients
  • 1 jalapeño chopped For added spice
  • 1/4 cup green onions Chopped
  • 1/4 cup cilantro Chopped
  • 1 tbsp lime juice For flavor adjustment

Method
 

Preparation
  1. In a medium bowl, stir together sour cream and mayonnaise until smooth.
  2. Sprinkle in ranch seasoning and mix well.
  3. Gently fold in drained Rotel, corn, black beans, and shredded cheese.
  4. If using, add chopped jalapeño and green onions.
  5. Chill the dip for at least 30 minutes before serving for best flavor.

Notes

Drain all canned ingredients well to keep the dip from getting watery. It can be made ahead of time for better flavor.
