Ingredients
  

Main Ingredients
  • 6 large whole eggs Provide the best flavor and texture.
  • 1 cup full-fat cottage cheese Gives a creamy texture.
  • 1 cup shredded cheese Cheddar, Monterey Jack, Gruyere, or a mix work well.
  • 1/2 teaspoon salt Keep it simple at first.
  • 1/4 teaspoon black pepper Season to taste.
Optional Add-Ins
  • 1/2 cup chopped spinach Squeeze moisture out to prevent sogginess.
  • 1/2 cup cooked bacon Crumbled.
  • 1/2 cup diced bell pepper
  • 1/4 cup green onions Chopped.
  • 1/2 cup mushrooms Sauté until moisture is gone.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. Grease a muffin tin really well, or use silicone muffin cups on a baking sheet.
  3. In a blender, add eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
  4. Stir in any chunky add-ins by hand, like cooked bacon or chopped spinach.
  5. Pour the mixture into the muffin cups, filling each about three quarters full.
  6. Place the muffin tin in a larger baking dish. Pour hot water into the outer dish until it comes up about halfway on the muffin tin.
Baking
  1. Bake in the preheated oven for about 22 to 28 minutes, or until the centers look set.
  2. Cool for a few minutes before removing from the pan.

Notes

Cool completely before storing. They can be stored in a sealed container in the fridge for up to 4 days. Reheat in the microwave or toaster oven.
