Creamy Cowboy Caviar Dip

Ingredients
  

For the creamy base
  • 3/4 cup Greek yogurt or sour cream Use all yogurt or sour cream if you prefer to omit mayo.
  • 1-2 tablespoons Mayonnaise For added richness, optional.
  • 1 tablespoon Lime juice Fresh lime juice tastes best.
  • 1 pinch Cumin
  • 1 pinch Chili powder Adjust to taste.
  • to taste Salt and pepper
For the dip
  • 1 can Black beans Rinsed and drained.
  • 1 cup Corn Canned, frozen (thawed), or grilled corn cut off the cob.
  • 1 cup Diced tomatoes Roma tomatoes are recommended.
  • 1 medium Bell pepper Any color, red or orange adds sweetness.
  • 1/4 cup Red onion A little goes a long way.
  • 1 medium Jalapeno Optional; remove seeds for less heat.
  • 1/4 cup Cilantro Optional.
  • 1/2 cup Shredded cheese Cheddar or pepper jack, optional.

Method
 

Preparation
  1. In a medium bowl, stir together Greek yogurt or sour cream, mayonnaise, lime juice, cumin, chili powder, salt, and pepper.
  2. In a large bowl, add black beans, corn, diced tomatoes, bell pepper, red onion, jalapeno, and cilantro. Toss to combine.
  3. Pour the creamy mixture over the large bowl and stir until all ingredients are well coated.
  4. Taste and adjust seasoning as needed.
  5. For best flavor, chill in the fridge for 30 to 60 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Stir before serving. Avoid freezing to maintain texture.
