Preparation
- Season the chicken with salt and pepper.
- Heat a large skillet on medium high with butter or oil.
- Add chicken and cook until browned and cooked through. Remove to a plate.
Cooking Cabbage
- In the same skillet, add more butter if the pan is dry.
- Add garlic and stir for about 30 seconds.
- Add the cabbage with a pinch of salt. Stir and cook until it softens, about 8 to 12 minutes. Adding a splash of broth or water if it sticks.
- Pour in the cream and let it gently bubble for 2 to 3 minutes.
- Lower the heat and stir in parmesan until smooth. Add nutmeg or red pepper flakes if using.
- Add the chicken back in and stir until everything is coated and hot.
- Taste and adjust salt, pepper, and parmesan. Finish with a squeeze of lemon if desired.
Notes
This recipe is forgiving; if the sauce seems too thick, add a splash of broth or milk. If too thin, simmer longer and add a bit more parmesan. Keep the heat low to prevent graininess when adding cheese.
