Creamy Cabbage Alfredo

Ingredients
  

Main ingredients
  • 1.5 pounds chicken breast or thighs, cut into bite size pieces You can use either cut.
  • 6 cups cabbage, sliced thin About half a medium head is usually perfect.
  • 2 tablespoons butter or olive oil, or a mix To cook chicken and cabbage.
  • 3-4 cloves garlic, minced For flavor.
  • 1 cup heavy cream or half and half Choose based on how rich you want the dish.
  • 3/4 cup grated parmesan Plus more to finish.
  • to taste Salt and black pepper For seasoning.
Optional ingredients
  • pinch nutmeg For classic Alfredo warmth.
  • to taste red pepper flakes For added heat.
  • splash chicken broth To prevent sticking.

Method
 

Preparation
  1. Season the chicken with salt and pepper.
  2. Heat a large skillet on medium high with butter or oil.
  3. Add chicken and cook until browned and cooked through. Remove to a plate.
Cooking Cabbage
  1. In the same skillet, add more butter if the pan is dry.
  2. Add garlic and stir for about 30 seconds.
  3. Add the cabbage with a pinch of salt. Stir and cook until it softens, about 8 to 12 minutes. Adding a splash of broth or water if it sticks.
  4. Pour in the cream and let it gently bubble for 2 to 3 minutes.
  5. Lower the heat and stir in parmesan until smooth. Add nutmeg or red pepper flakes if using.
  6. Add the chicken back in and stir until everything is coated and hot.
  7. Taste and adjust salt, pepper, and parmesan. Finish with a squeeze of lemon if desired.

Notes

This recipe is forgiving; if the sauce seems too thick, add a splash of broth or milk. If too thin, simmer longer and add a bit more parmesan. Keep the heat low to prevent graininess when adding cheese.
