Creamy Bacon Gnocchi Skillet

Main Ingredients
  • 1 lb shelf stable potato gnocchi Refrigerated gnocchi can also be used.
  • 6 oz thick cut bacon Provides the best flavor and bite.
  • 1 cup chicken broth Helps create the sauce.
  • 1 cup heavy cream Can substitute with half and half.
  • 1 cup freshly grated parmesan cheese Grate yourself for better melting.
  • 2 cloves garlic Fresh garlic preferred.
  • to taste salt Use sparingly due to the saltiness of bacon and cheese.
  • to taste black pepper
Optional Extras
  • 1 cup fresh spinach Can add for extra nutrition.
  • 1 cup cooked chicken Optional, but recommended for added heartiness.
  • to taste red pepper flakes For a spicy kick.

Method
 

Preparation
  1. Heat a large skillet over medium heat and add chopped bacon. Cook until crispy and fat has rendered.
  2. Scoop the bacon out onto a plate, leaving a couple tablespoons of bacon fat in the pan.
Cooking
  1. If using chicken, season with salt and pepper, then add to the skillet. Cook until browned and cooked through, then remove and set aside.
  2. Reduce heat slightly, add minced garlic, and cook for about 30 seconds until fragrant.
  3. Pour in chicken broth, scraping up any browned bits from the bottom. Add the gnocchi and stir while letting it simmer gently.
  4. Once gnocchi softens, stir in heavy cream and parmesan until melted and sauce thickens. Adjust consistency with additional broth if necessary.
  5. Return chicken and bacon to the skillet, taste, and adjust seasoning with salt and pepper if needed.
  6. Optionally, add spinach until wilted, and garnish with extra parmesan and red pepper flakes.

Notes

This is a forgiving recipe; adapt it with whatever ingredients you have. For a refreshing side, serve with a chilled salad.
