Preparation
- Heat a large skillet over medium heat and add chopped bacon. Cook until crispy and fat has rendered.
- Scoop the bacon out onto a plate, leaving a couple tablespoons of bacon fat in the pan.
Cooking
- If using chicken, season with salt and pepper, then add to the skillet. Cook until browned and cooked through, then remove and set aside.
- Reduce heat slightly, add minced garlic, and cook for about 30 seconds until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom. Add the gnocchi and stir while letting it simmer gently.
- Once gnocchi softens, stir in heavy cream and parmesan until melted and sauce thickens. Adjust consistency with additional broth if necessary.
- Return chicken and bacon to the skillet, taste, and adjust seasoning with salt and pepper if needed.
- Optionally, add spinach until wilted, and garnish with extra parmesan and red pepper flakes.
Notes
This is a forgiving recipe; adapt it with whatever ingredients you have. For a refreshing side, serve with a chilled salad.
