Ingredients
  

Cheese Mixture
  • 2 blocks cream cheese, softened to room temperature
  • 1 cup shredded sharp cheddar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pinch salt
  • to taste pepper a few grinds
  • 2 tablespoons honey or maple syrup
Add-ins
  • 1 cup dried cranberries, chopped
  • 1 cup pecans, toasted and finely chopped Reserve some for rolling later
  • 2 pieces green onions, finely sliced
Garnish and Serving
  • Fresh parsley and rosemary sprigs for garnish
  • Crackers, pretzels, or crostini for serving

Method
 

Preparation
  1. Toast the pecans in a dry pan over medium heat for a few minutes until fragrant.
  2. Chop half of the toasted pecans finely for the cheese mix.
  3. In a big bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, pepper, and honey. Mix until smooth and fluffy.
  4. Fold in the dried cranberries, green onions, and half of the chopped pecans.
  5. Chill the mixture for 15 to 20 minutes.
Shaping
  1. Scoop the cheese mixture onto a piece of plastic wrap and shape it into a cone, resembling a Christmas tree.
  2. Chill again for an additional 10 to 15 minutes.
Decoration
  1. Unwrap and press the remaining chopped pecans all over the outside.
  2. Decorate with parsley, cranberries, and a rosemary sprig on top.

Notes

Make ahead by preparing the cheese mixture up to 3 days in advance. Shape and garnish shortly before serving to ensure freshness.
