  • 2 pounds boneless skinless chicken breasts or thighs Breasts shred nicely; thighs are richer.
  • 8 ounces cream cheese Full fat tastes best, cut into chunks for melting.
  • 1 packet ranch seasoning Store-bought or homemade mix.
  • 2 cups shredded cheddar cheese Sharp cheddar gives the most flavor.
  • 6 slices cooked bacon Crumble some for topping.
  • 2 green onions Optional for garnish.
  • 6 buns or rolls Soft brioche buns recommended.

Preparation
  1. Place chicken in the crockpot.
  2. Sprinkle ranch seasoning over the chicken.
  3. Add cream cheese in chunks on top of the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
Shredding and Mixing
  1. Once the chicken is tender, shred it directly in the crockpot using two forks.
  2. Stir everything together until the cream cheese is fully melted and the mixture is creamy.
  3. Add cheddar and bacon crumbles, stir again, and let it sit with the lid on for about 10 minutes.
Serving
  1. Serve the mixture on toasted buns. Top with additional cheese or pickled jalapenos if desired.

Notes

For a lighter option, serve the filling in lettuce wraps or on cauliflower rice. If looking for keto-friendly, omit the bun.
