Ingredients
  

For the Cowboy Butter Sauce
  • ½ cup butter, melted
  • 4 cloves garlic, minced Fresh minced is best
  • 2 tbsp lemon juice Brightens the flavor
  • ¼ cup parsley, chopped Or mixed herbs
  • 1 tbsp Dijon mustard Adds depth
  • 1/2 tsp red pepper flakes Optional for heat
  • to taste salt and pepper
For the Chicken
  • 4 pieces bone-in, skin-on chicken thighs Preferred for juiciness and crispy skin

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. Season the chicken thighs with salt and pepper, and let them sit for at least 15 minutes.
  4. In a bowl, mix melted butter, minced garlic, lemon juice, chopped parsley, Dijon mustard, and red pepper flakes.
Cooking
  1. Place the chicken thighs skin side up in a baking dish or on a sheet pan.
  2. Brush a layer of cowboy butter over the chicken.
  3. Bake in the preheated oven for about 25 minutes.
  4. Increase the oven temperature to 450°F (230°C) and bake for an additional 10 minutes to crisp the skin.
  5. Brush additional cowboy butter on the chicken in the last few minutes of cooking.
Serving
  1. Remove from the oven and let rest for 5 minutes before serving.
  2. Serve warm with the remaining cowboy butter sauce drizzled over the top.

Notes

For the crispiest skin, make sure the thighs are not overcrowded in the pan. Pair with sides that can soak up the butter sauce.
