- Heat a large skillet on medium heat. Add sausage or bacon and cook until browned. Spoon out any excess grease, leaving a little for flavor.

- Stir in onion and bell pepper. Cook for 3 to 5 minutes until they soften, then add garlic for the last 30 seconds.
- Make little wells in the potato mixture and crack in the eggs. Cover the skillet and let the eggs cook until the whites are set.
- Sprinkle cheddar cheese over everything, cover again for 1 to 2 minutes until melted.
- Add toppings like salsa or hot sauce. Serve straight from the pan while hot.
