  • 12 oz pasta (ziti, penne, or rigatoni) Choose your preferred type.
  • 1 cup cottage cheese Full fat or low fat both work.
  • 2 cups marinara sauce Jarred is fine; pick one you like.
  • 2 cloves garlic, minced Brings great flavor.
  • 1 tbsp Italian seasoning Season to enhance flavor.
  • 1 cup shredded mozzarella cheese For a melty topping.
  • 1/2 cup Parmesan cheese Optional but highly recommended.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta in a large pot of salted boiling water until just al dente, about 8-10 minutes. Drain and set aside.
  3. In a blender, combine cottage cheese, marinara sauce, garlic, Italian seasoning, salt, and pepper. Blend until smooth.
Mixing & Baking
  1. In a large bowl, combine the cooked pasta with the cottage cheese mixture until evenly coated.
  2. Transfer the mixture to a baking dish and top with shredded mozzarella and Parmesan cheese.
  3. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  4. Let it rest for 10 minutes before slicing and serving.

Notes

This dish is great for leftovers! Store in airtight containers in the fridge for up to 4 days, or freeze for longer storage. If reheating, add a splash of water or extra marinara to keep it moist.
