Ingredients
  

Filling
  • 1 can black beans, rinsed and drained Rinsing helps with flavor and texture.
  • 1 cup corn, canned drained, frozen thawed, or fresh cooked
  • 1 to 2 cups shredded cheese (cheddar, Monterey Jack, or a blend) Adjust based on preference.
  • 1 handful red onion or green onion, chopped
  • 1 optional bell pepper, chopped small Optional for added flavor.
  • spices: cumin, chili powder, garlic powder, salt, pepper Adjust to taste.
  • something tangy (lime juice, salsa, or a little hot sauce)
  • 1 tbsp oil or butter for the pan For cooking the quesadillas.

Method
 

Preparation
  1. Mix the filling: In a bowl, stir together black beans, corn, onion, and any extra veggies you are using. Add a squeeze of lime, a pinch of salt, cumin, chili powder, and garlic powder. Use salsa cautiously to avoid sogginess.
  2. Build the quesadilla: Lay one tortilla down and sprinkle cheese on one half. Add a layer of filling, then another sprinkle of cheese on top of the filling. Fold it over into a half moon.
Cooking
  1. Heat a skillet over medium heat and add a tiny bit of oil or butter. Cook the folded quesadilla for 2 to 3 minutes per side, pressing gently with a spatula to crisp it and melt the cheese.
  2. Let it sit for about a minute before cutting to allow the cheese to set. Slice into wedges and serve.

Notes

Can be made heartier by adding shredded chicken, ground beef, turkey, or chorizo. Great served with salsa, sour cream, guacamole, shredded lettuce, or rice.
