  • 1 cup blueberries Optional, but a nice addition.
  • 1 cup pineapple, small chunks Drain if using canned.
  • 1 cup mandarin oranges Drain if canned.
  • 1/2 cup pecans, toasted Toast for enhanced flavor.
  • 1/2 cup feta, crumbled Optional, for salty contrast.
Dressing
  • 1/2 cup poppyseed dressing Store bought or homemade.

Preparation
  1. Wash and dry the mixed greens thoroughly.
  2. Prep the fruits: slice the strawberries, drain the mandarin oranges, and pat the pineapple dry if using canned.
  3. Shred or chop the cooked chicken into bite-sized pieces.
Assembly
  1. In a large bowl, combine the mixed greens, strawberries, blueberries, pineapple, and mandarin oranges.
  2. Add the shredded chicken and toasted pecans just before serving.
  3. Drizzle the poppyseed dressing over the salad, tossing gently to combine.

For best results, assemble the salad right before serving, keeping dressing and wet ingredients separate if you plan on storing leftovers.
