Cooking Steps
- Melt the butter in a saucepan over medium low heat. Once melted, add the garlic and stir for about 30 seconds until fragrant.
- Pour in the heavy cream and stir, letting it warm up until a gentle simmer appears around the edges. Keep the heat low.
- If using cream cheese, add it now and stir until it melts into the sauce.
- Gradually add the Parmesan cheese in handfuls, stirring until it melts and thickens the sauce.
- Taste the sauce, then add salt and pepper to your liking. Optionally, add a tiny pinch of nutmeg.
- Toss the sauce with hot pasta immediately. If the sauce is too thick, loosen it with a splash of hot pasta water.
Notes
For extra creamy sauce, use freshly grated Parmesan, keep the heat gentle, and allow the sauce to sit off heat for a couple of minutes before serving.
