Preparation
- Preheat the oven to 350°F and line a baking pan with parchment paper.
- In a large bowl, stir together the soft butter and granulated sugar until creamy.
- Add the egg and vanilla extract, plus almond extract if using, and mix well.
- Sprinkle in the flour, baking powder, and salt. Stir just until there are no visible dry ingredients.
- Scoop the dough into thick balls and lightly flatten into a tall puck shape.
Baking
- Bake in the preheated oven for 9 to 11 minutes, until the edges are set but the centers still look soft.
- Cool completely before frosting to keep the frosting fluffy.
Frosting
- For the frosting, beat the soft butter and powdered sugar together, adding milk slowly until you reach spreadable consistency.
- Mix in vanilla extract and pink food coloring.
- Frost the cooled cookies and allow the frosting to set for 20 to 30 minutes.
Notes
For a thicker cookie, do not flatten too much. If gifting, pack them alone or layer with parchment paper between layers. They freeze well without frosting.
