Method
Marinating the Chicken
- Blend the chipotles, adobo sauce, olive oil, lime juice, garlic, and spices into a paste, or chop and mix in a bowl.
- Marinate the chicken for at least 30 minutes, preferably 2 to 8 hours.
Cooking the Chicken
- For stovetop: Heat a skillet over medium-high heat. Add oil if necessary. Lay chicken in a single layer without touching and let brown.
- Flip the chicken, cook until done, and let rest for 5 minutes before slicing.
- For oven: Bake marinated chicken on a sheet pan at 425°F until cooked through. Broil for 1-2 minutes for extra browning.
- For grilling: Grill over medium-high heat until cooked through.
Assembling the Bowl
- Start with a base layer of rice in a bowl.
- Add beans, then the cooked chicken.
- Top with pico de gallo, fajita veggies, shredded lettuce, cheese, and a squeeze of lime.
- Add avocado if desired.
Notes
To maintain moisture, do not skip resting the chicken. Build layers for flavor and texture; start with rice, then beans, and layer toppings for the best experience.
