Ingredients
  

Marinade Ingredients
  • 1 lb Chicken thighs or chicken breast Thighs stay juicier
  • 2-3 pieces chipotle peppers in adobo sauce Adjust to taste
  • 1 tbsp adobo sauce
  • 2 tbsp olive oil
  • 1 Juice lime
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika Or regular paprika if unavailable
  • 1 tsp dried oregano
  • 1 tsp salt
  • to taste black pepper
  • 1 tsp honey or brown sugar Optional for a tiny bit of sweetness
Bowl Ingredients
  • 2 cups rice Choose your preferred type (white, brown, or cauliflower)
  • 1 can black beans Or pinto beans or skip
  • 1 cup fajita veggies (peppers and onions) Optional topping
  • 1 cup pico de gallo Or any salsa
  • 1 cup shredded lettuce
  • 1/2 cup cheese, shredded Optional topping
  • 1 to taste lime For squeezing on top
  • 1 to taste avocado Optional topping

Method
 

Marinating the Chicken
  1. Blend the chipotles, adobo sauce, olive oil, lime juice, garlic, and spices into a paste, or chop and mix in a bowl.
  2. Marinate the chicken for at least 30 minutes, preferably 2 to 8 hours.
Cooking the Chicken
  1. For stovetop: Heat a skillet over medium-high heat. Add oil if necessary. Lay chicken in a single layer without touching and let brown.
  2. Flip the chicken, cook until done, and let rest for 5 minutes before slicing.
  3. For oven: Bake marinated chicken on a sheet pan at 425°F until cooked through. Broil for 1-2 minutes for extra browning.
  4. For grilling: Grill over medium-high heat until cooked through.
Assembling the Bowl
  1. Start with a base layer of rice in a bowl.
  2. Add beans, then the cooked chicken.
  3. Top with pico de gallo, fajita veggies, shredded lettuce, cheese, and a squeeze of lime.
  4. Add avocado if desired.

Notes

To maintain moisture, do not skip resting the chicken. Build layers for flavor and texture; start with rice, then beans, and layer toppings for the best experience.
