Method
Preparation
- Chop your kale into bite-size pieces, removing large stems. Add the kale to a large bowl.
- Add the shredded green cabbage to the bowl, aiming for a balance of kale and cabbage.
- Massage the kale with a pinch of salt and a small drizzle of olive oil for about 30 seconds to improve texture.
Making the Dressing
- In a jar with a lid, combine olive oil, apple cider vinegar, Dijon mustard, maple syrup or honey, salt, and pepper.
- Shake vigorously to combine until the dressing is smooth.
Combining the Salad
- Pour the dressing over the salad and toss to combine, adding more dressing as needed to avoid soaking.
- Add the sliced almonds just before serving to maintain their crunch.
Notes
Ideal for meal prep; keep the almonds separate until served to prevent sogginess. Works well with grilled or crispy chicken, soups, sandwiches, or BBQ dishes. Holds up in the fridge for 2 days.
