Ingredients
  

Brownie Base
  • 1 box Red velvet cake mix For easy days
  • 2 large Eggs Room temperature
  • 1/2 cup Unsalted butter Melted
  • 1/4 cup Granulated sugar Adjust based on sweetness preference
  • 2 tablespoons Cocoa powder To enhance chocolate flavor
  • 1 teaspoon Vanilla extract
Cream Cheese Swirl
  • 8 ounces Cream cheese Room temperature for easier mixing
  • 1/2 cup Powdered sugar
Crushed Cookies
  • 10 pieces Sandwich cookies Any favorite brand, crushed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the red velvet cake mix, eggs, melted butter, granulated sugar, cocoa powder, and vanilla extract. Mix until smooth.
  3. Spread half of the brownie batter into the prepared baking dish.
Prepare Cream Cheese Mixture
  1. In another bowl, beat the room temperature cream cheese with the powdered sugar until smooth.
  2. Dollop the cream cheese mixture over the brownie batter in the baking dish and swirl it in gently with a knife or skewer.
Combine and Bake
  1. Spread the remaining brownie batter on top of the cream cheese layer.
  2. Sprinkle the crushed sandwiches on top.
  3. Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out with moist crumbs.
Cooling and Serving
  1. Allow the brownies to cool in the pan before slicing into squares.
  2. Serve warm or store in the refrigerator for up to 5 days.

Notes

These brownies can be frozen for up to two months. Consider serving with vanilla ice cream for a delightful treat.
