  • 1 cup Shredded coconut Both unsweetened and sweetened work.
  • 1 cup Panko breadcrumbs For added crunch.
  • 2 Eggs Beaten.
  • 1/2 cup All-purpose flour For coating.
  • 1 teaspoon Salt For seasoning.
  • 1 teaspoon Pepper For seasoning.
  • 1/2 teaspoon Paprika or garlic powder Optional seasoning.
  • cooking spray Cooking spray or a light brush of oil
Dipping Sauces
  • Sweet chili sauce For dipping.
  • Mayonnaise mixed with sriracha and lime Another great dipping option.

Method
 

Preparation
  1. Pat the shrimp dry with paper towels to help the coating stick.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of coconut and panko.
  3. Season the flour with salt, pepper, and a pinch of paprika if desired.
  4. Dip each shrimp in the flour, then the egg, and finally press into the coconut panko mix.
  5. Preheat your air fryer for a few minutes.
Cooking
  1. Spray the air fryer basket lightly, then lay the shrimp in a single layer without crowding.
  2. Spray the tops lightly with cooking spray.
  3. Air fry at 375°F for about 8 to 10 minutes, flipping halfway through.
  4. Check for doneness: the coating should be golden and crisp, and the shrimp should be opaque and firm.

Notes

For best results, ensure the shrimp are well dried before coating. Do not overload the basket to ensure crispness. A light spritz of oil helps with browning.
