  • 3 cups Unsweetened shredded coconut
  • 3/4 cup Granulated sugar
  • 3 large Egg whites
  • 1.5 teaspoons Vanilla extract
  • 1/4 teaspoon Salt
  • 1-2 tablespoons Mini chocolate chips (optional) For dipping or added flavor
  • 1 teaspoon Lemon zest (optional) For added flavor

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the coconut, sugar, and salt.
  3. In another bowl, lightly beat the egg whites until foamy (no need for stiff peaks).
  4. Stir the egg whites and vanilla into the coconut mixture until combined.
  5. Scoop about 1 1/2 tablespoons of the mixture onto the baking sheet to form mounds.
  6. Bake for 18 to 22 minutes, until golden on top. Allow to cool on the pan for 10 minutes before transferring to a rack.

Notes

Macaroons can be dipped into melted chocolate once cooled for extra flair. They keep well in an airtight container for about 4 days.
