  • 2 cups shredded coconut Use sweetened or unsweetened coconut.
  • 1 can sweetened condensed milk (about 14 oz)
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour Can swap with gluten-free flour.
  • 1 pinch salt Enhances flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded coconut and flour.
  3. Add the sweetened condensed milk, melted butter, vanilla extract, and a pinch of salt to the bowl.
  4. Mix until well combined; the mixture will be thick and sticky.
  5. Spread the mixture into a lined 8x8 inch baking pan, smoothing it out with a spatula or your hands.
  6. Bake for about 25-30 minutes, until the top is lightly golden brown.
  7. Let cool before slicing into bars.

Notes

These bars stay soft longer than most desserts; store them tightly wrapped. They can be frozen for later enjoyment.
