Preparation
- Preheat your oven to 350°F (175°C). Grease or line a 9x13 baking dish with parchment paper.
- In a mixing bowl, pour melted butter over brown sugar and mix until it resembles gooey caramel.
- Add eggs and vanilla extract, then mix just until combined.
- Gently stir in flour and salt until just incorporated. Do not overmix.
- Fold in shredded coconut.
Baking
- Spread the mixture evenly in the prepared baking dish.
- Bake for about 25 minutes, until edges are golden but the center is still slightly jiggly.
Cooling
- Allow the bars to cool completely in the pan before slicing.
Notes
These bars can be modified with chocolate chips or nuts. They are best stored covered at room temperature for up to 4 days. Can be frozen for up to a month.
