Main Ingredients
  • 1 cup unsalted butter, room temperature (2 sticks) Use European-style butter for richer flavor.
  • 1/3 cup honey, room temperature Mild clover or wildflower honey works best.
  • 1/2 cup powdered sugar, sifted Powdered sugar stabilizes the butter.
  • 1 to 1.5 teaspoons ground cinnamon, to taste Use freshly opened cinnamon for best flavor.
  • 1 pinch fine sea salt Skip if using salted butter.
  • 1/2 teaspoon vanilla extract (optional) Adds extra warmth.

Method
 

Preparation
  1. Let the butter sit out until cool but pliable. It should dent easily but not slump.
  2. Beat the butter alone for 2 to 3 minutes until it looks pale and fluffy.
  3. Add the honey in a slow stream while mixing on low. Increase to medium and beat for 30 seconds.
  4. Sprinkle in the powdered sugar and cinnamon. Mix on low until combined, then whip on medium-high for 1 to 2 minutes.
  5. Taste and add a pinch of salt if needed. If using vanilla, beat it in now.
  6. Let it rest for 10 to 15 minutes, then give it a quick stir and serve.

Notes

Store leftovers in the fridge for freshness, and allow to sit at room temperature before serving. Freezes well for up to 3 months.
