Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the melted butter, milk, and eggs.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the diced apples.
Baking
  1. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  2. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  3. Let cool completely before frosting.
