Churro Waffles with Cinnamon Sugar

Deliciously fluffy waffle version of churros, coated in a warm cinnamon sugar mixture, perfect for breakfast.

Ingredients
  

Waffle Batter
  • 2 cups All purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoons Granulated sugar For the batter
  • 2 large Eggs
  • 1.75 cups Milk Any kind works
  • 1/2 cup Melted butter Plus extra for brushing
  • 2 teaspoons Vanilla extract
Cinnamon Sugar Coating
  • 2 teaspoons Cinnamon For the coating
  • 1/2 cup Sugar For coating

Method
 

Preparation
  1. Preheat your waffle maker.
  2. In a bowl, whisk the flour, baking powder, salt, and 2 tablespoons of sugar.
  3. In another bowl, whisk together the eggs, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until combined. A few small lumps are fine.
  5. Lightly grease the waffle maker.
Cooking
  1. Pour the batter into the waffle maker and cook until golden.
  2. In a shallow dish, mix 1/2 cup sugar with 2 teaspoons cinnamon.
  3. When the waffle is cooked, brush both sides lightly with melted butter.
  4. Press the waffle into the cinnamon sugar mix, flip, and coat the other side.
  5. Let the waffles breathe on a rack or plate for a minute before stacking to keep the sugar crisp.

Notes

For a little luxury, serve with brown sugar cinnamon butter. They can be made ahead and refrigerated, and freezing the plain waffles is also possible.
