Preparation
- Preheat your waffle maker.
- In a bowl, whisk the flour, baking powder, salt, and 2 tablespoons of sugar.
- In another bowl, whisk together the eggs, milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until combined. A few small lumps are fine.
- Lightly grease the waffle maker.
Cooking
- Pour the batter into the waffle maker and cook until golden.
- In a shallow dish, mix 1/2 cup sugar with 2 teaspoons cinnamon.
- When the waffle is cooked, brush both sides lightly with melted butter.
- Press the waffle into the cinnamon sugar mix, flip, and coat the other side.
- Let the waffles breathe on a rack or plate for a minute before stacking to keep the sugar crisp.
Notes
For a little luxury, serve with brown sugar cinnamon butter. They can be made ahead and refrigerated, and freezing the plain waffles is also possible.
