Preparation
- Pulse the cookies in a food processor until they are fine crumbs with a sandy texture.
- Blend the crumbs with softened cream cheese until smooth and well combined.
- Roll the mixture into 1-inch balls and place them on a parchment-lined sheet.
- Chill the balls for 20 minutes to firm up.
Dipping
- Melt the chocolate in the microwave in 20 to 30 second bursts, stirring until smooth.
- If the chocolate is too thick, add 1 teaspoon of neutral oil to loosen.
- Dip each ball using a fork, letting the excess chocolate drip off before setting it back on the parchment.
- Add optional toppings before the coating sets.
- Chill the dipped balls again for 15 minutes, then serve or store.
