Christmas Morning Breakfast Casserole (Make Ahead)

Ingredients
  

Base
  • 8 to 10 cups cubed bread (sturdy sandwich bread, brioche, or leftover rolls) Slightly stale bread works best.
Protein
  • 1 pound breakfast sausage, cooked and drained Can also substitute with bacon or diced ham.
Custard and Cheese
  • 10 large eggs Necessity for the egg mixture.
  • 2.5 cups milk Use half and half for a richer flavor if desired.
  • 2 to 3 cups shredded cheese (cheddar, Swiss, or Monterey Jack) Adjust type of cheese according to preference.
  • to taste salt and pepper Standard seasoning.
  • to taste garlic powder and a pinch of paprika Additional seasonings for flavor.
Optional Add-ins
  • as desired onions, bell peppers, spinach, or mushrooms Add for extra veggies.

Method
 

Preparation
  1. Grease a 9x13 dish.
  2. Add the cubed bread to the greased dish.
  3. Scatter the cooked sausage and any optional veggies over the bread.
  4. In a separate bowl, whisk the eggs, milk, and seasonings together.
  5. Pour the egg mixture evenly over the bread and sausage layers.
  6. Top with shredded cheese.
  7. Cover tightly and refrigerate overnight.
Baking
  1. Preheat the oven to 350°F.
  2. Remove casserole from the fridge and let it sit for 20 to 30 minutes.
  3. Bake for 45 to 60 minutes, or until the top is golden and center is set.
  4. If the top browns too fast, cover loosely with foil.

Notes

Leftovers keep for 3 to 4 days in the fridge; can be frozen as baked slices. Reheat covered in the oven or microwave, adding a splash of milk if needed.
