Ingredients
  

For the Ham
  • 1 ea bone-in, spiral sliced ham (6 to 12 lbs) Bone-in is preferred for better flavor and moisture retention.
  • 1 cup water or juice To keep the ham moist during cooking.
For the Glaze
  • 1/2 cup honey Adds smooth sweetness.
  • 1/2 cup brown sugar Light or dark brown sugar works for deeper flavor.
  • 1/4 cup Dijon mustard Adds a tangy, sophisticated flavor.
  • 1/4 cup apple cider vinegar or orange juice To brighten the glaze.
  • 1/4 cup butter Makes the glaze richer and helps it stick.
  • 1 pinch cinnamon or cloves Optional, for added holiday flavor.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. Place the ham cut side down in a roasting pan.
  3. Add water or juice to the bottom of the pan to keep moisture, approximately 1 cup.
  4. Cover the ham tightly with foil.
Making the Glaze
  1. In a small saucepan, combine honey, brown sugar, Dijon mustard, apple cider vinegar or orange juice, and butter.
  2. Heat over medium-low until sugar dissolves and mixture is smooth. Do not scorch.
Cooking the Ham
  1. Warm the covered ham in the oven for about 10 to 12 minutes per pound to reach an internal temperature of 140°F (60°C).
  2. After warming, remove the foil for the last 30 to 45 minutes.
  3. Brush ham generously with glaze, applying additional glaze every 10 to 15 minutes.
  4. Rest the ham for 10 to 15 minutes before slicing.

Notes

Make the glaze up to 5 days ahead. Store in the fridge in a jar. To reheat, warm gently. Leftover ham can be stored in an airtight container for 4 days, or frozen for up to 2 months.
