Chocolate Stuffed Banana Bread

Ingredients
  

Wet Ingredients
  • 3 pieces very ripe bananas, mashed until mostly smooth Darker peel means sweeter bread.
  • 1 stick butter, melted
  • 1/2 cup brown sugar Mix of brown and white sugar is recommended.
  • 1/2 cup white sugar
  • 2 pieces eggs, room temperature if possible
  • 1 tablespoon vanilla extract Use a generous splash.
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda For lift.
  • 1/2 teaspoon salt Just enough to enhance flavor.
  • 1 cup chocolate chunks or a bar, broken into pieces For the stuffed center.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the wet ingredients (mashed bananas, melted butter, brown sugar, white sugar, eggs, and vanilla).
  3. In another bowl, whisk together the dry ingredients (flour, baking soda, salt).
  4. Combine the wet and dry mixtures, stirring until just combined; lumpy batter is acceptable.
Baking
  1. Pour half of the batter into the greased loaf pan, layer in the chocolate pieces down the center, then cover with the rest of the batter.
  2. Bake for about 60 minutes or until the top is set and a toothpick comes out clean, being careful not to overbake.
Making Truffles (Optional)
  1. If you have leftover bread, crumble it in a bowl. If too dry, mix in peanut butter, cream cheese, or milk.
  2. Roll into small balls and chill for 20 minutes.
  3. Melt chocolate in short bursts in a microwave, dip each ball, let excess drip off, and place on parchment.
  4. Add toppings like flaky salt or crushed nuts if desired, and chill until set.

Notes

Use very ripe bananas for sweeter bread. Avoid overmixing to keep the bread light and fluffy. Let the bread cool before slicing to prevent crumbling.
